Defaix Chablis Vieilles Vignes is a gorgeous example of traditional winemaking in this famous appellation of Burgundy, showing off the natural beauty of the Chardonnay grape. The Defaix family has lived in the hamlet of Milly adjoining the village of Chablis for over 300 years. Domaine Daniel-Etienne Defaix owns 26 hectares of vineyards in Chablis, averaging 38 years old. This Vieilles Vignes (old-vines) bottling is composed of vineyards of 30 to 70 years of age. Defaix wines undergo malolactic fermentation and are aged for 18 months in stainless steel cuves, with a monthly stirring of the lees to obtain maximum richness.

Defaix Chablis Vieilles Vignes is yellow-amber in color with an aromatic nose of apples, citrus and mineral notes. Full-bodied with moderate acidity, it offers flavors of baked apple pie, lemon and spice, with a rich mouthfeel and creamy texture. Ready to be enjoyed now and over the next 7-8 years. It has length and complexity on the finish.
