In recent years, the Texas High Plains has gained international attention as a superb region for vinifera grape growing. At an elevation of 3,400 feet above sea level, the area's climate is semi-arid and mild. Cool nights and warm to hot days predominate with low levels of relative humidity. The soil is a deep and well-drained sandy loam ideally suited to European varietal grapes. Most of the annual rainfall of eighteen to nineteen inches occurs during May, June and July. Bud break is in April and harvest and crush begins in late July or early August and ends by mid-September.

Cap Rock Cabernet Sauvignon is a full-bodied dry red with rich blackberry fruit and raspberry aromas followed by a smooth lingering finish accomlishedthrough the use of 18 months aging in French oak barrels. We aged this wine in our own cellars for a few years further and are now delighted at the outcome.

Pair with a hearty steak and sharp cheeses.
